WHAT DO YOU EAT DURING LUNCH? OFFICE MEALS SOMETIMES FALL INTO ONE OF TWO CATEGORIES: PRICEY OR BORING. SOME PEOPLE EITHER ORDER EXPENSIVE TAKEOUT OR BRING IN LEFTOVERS IN THE HOPES THAT THEY WILL REHEAT WELL. BUT, OF COURSE, IT DOESN’T HAVE TO BE THAT WAY!
4 QUICK LUNCH IDEAS
HERE ARE FOUR QUICK AND TASTY MEALS THAT CAN BE PREPARED IN UNDER FIFTEEN MINUTES:
1. SALAD IN JAR
The simplest way to bring a large, multi-ingredient salad to work is in a mason jar. The secret is just know how to mix it: The dressing is added first, then your firmest vegetables (carrots, etc.). Add your grains, beans, and/or protein after that. Add some lettuce or other lush greens on top. When you’re ready to eat, just dump it all into a bowl and toss!
2. PB&J
Nothing wrong with the classic, if that’s your jam. Try switching up peanut butter for sun butter or almond butter if you're up for something different. You may create a completely unique sandwich by simply adding one additional item. For texture, try adding sliced fresh fruit or bananas instead of jelly, or try sprinkling in some dried apricots or slicing up a fig.
3. PICNIC BOX
Bring some fruit, crackers, and your favorite cheese. (For example, a Honeycrisp apple with sharp cheddar is one of life’s simple pleasures.) Add some almonds or a couple pieces of cured ham, if you'd like. Voila! It's simple to have a picnic at the office.
4. ANY GREEN + ANY GRAIN + HUMMUS
A grain and a green are a good start, but if you crave something more solid to make it a meal, that solid thing is hummus. A good hummus is rich in protein, fiber and flavor; and that thick creaminess hits the spot so well.
